CHRISTMAS SPECIAL – EGG, POTATO, SEA URCHIN AND SAFFRON

INGREDIENTS

 4 ous de gallina ben frescos
 100 g de patata
 100 g de porro net
 40 ml de llet
 40 ml de brou de pollastre
 75 ml de nata
 4 Garotes
 Sal Maldon
 Un polsim de pebre
 20 ml Green Oil.

ELABORATION

In a frying pan with Arbequina EVOO Family Selection, fry the leeks and potatoes until sweaty

Season with salt and pepper and add the chicken stock and milk. Cook for 25 minutes

Add the cream and Pons Green oil and swirl the whole until well bound.

Pass the potato cream through a fine sieve, season with salt and pepper and set aside.

In a pot with 1 liter of boiling water, add a good pinch of salt and vinegar.

We break the eggs one by one inside a bowl, generate a swirl in the boiling water and throw an egg inside the swirl. Let it cook between 2 and 4 minutes depending on the size of the egg.

We clean the sea urchins and remove the 5 gonads. We reserve

In a glass, bowl, can or utensil that we think is appropiate we put:

A poached egg with a pinch of salt, pepper and some drops of saffron oil

Five gonads from sea urchin.
