Origins and Production Process
Pons Varietal Garden
The Pons Varietal Garden, planted in 2003 at 500m above sea level on limestone soils, has been the foundation for working with new olive crops that the Pons Family has cultivated in the territory. From the frost of 2001 until 2019, the garden has been Pons’ empirical center for researching the adaptation and results of different olive varieties in organic cultivation in our territory.
As a result of this research, PONS is firmly committed to this olive variety, a vigorous, resistant, and flexible tree characterized by the production of clustered olives and olives of good size with a high oleic acid content. Today, PONS has one of the largest Lecciana plantations in the world, totaling 80 hectares (130,000 olive trees).
Production Process
It is a variety with very early ripening that allows for the production of first harvest extra virgin oils during the month of September, therefore we are talking about a highly early harvest oil, made with very premature olives.
The olive oil extraction is done cold, as it is a key process to preserve the quality and nutritional properties of the oil. It is important to highlight that the cold extraction process involves keeping the temperature of the process below 26°C (80°F) to preserve the organoleptic and nutritional qualities of the oil, such as its aroma, flavor, and antioxidant content. This cold extraction method is essential for obtaining extremely high-quality extra virgin olive oils.
